Varieties
Covington
Our favorite variety, Covingtons are perfect for mashing or roasting. This variety accounts for more than 80% of our acres and has rose-colored skin with very sweet orange flesh.
Evangeline
Evangelines are unique because they are sweeter at the time of harvest and are great for baking or microwaving.
Murasaki
This variety originated in Japan and have purple, reddish skin with starchy white flesh. You can roast these up with your other favorite vegetables for a colorful side dish. We are largest grower of Murasaki sweet potatoes in the US.
