Purple Sweetpotato Brownies
These brownies are slightly sweet, fudgy, and nutty. They are a delicious and healthy treat for your valentine with more protein, vitamin A, and antioxidants than typical brownies, and less sugar! We only use sweetpotatoes and maple syrup to sweeten the brownies, along with semi-sweet chocolate chips and festive M&M’s. Feel free to omit the M&M’s or swap for more chocolate chips.
While our recipe calls for purple sweetpotatoes, this recipe can be made with orange sweetpotatoes by omitting the milk in the ingredient list since orange sweetpotatoes have more moisture.
Ingredients:
2 cups Farm Pak purple sweetpotatoes, mashed (about 2 sweetpotatoes)
1 cup peanut butter (can sub sunflower seed butter if allergic to peanuts)
2 large eggs
2/3 cup honey
2/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/2 cup milk, plus more if needed
1/2 cup mini semi-sweet chocolate chips
2 teaspoons vanilla extract
1 tsp baking soda
1/2 teaspoon salt
1/4 cup Valentine’s M&Ms (optional)
Directions:
Bake the purple sweetpotatoes at 400 for an hour. Allow to cool and mash.
In a medium bowl, mix dry ingredients - cocoa powder, flour, baking soda, and salt together. Set aside.
In a large bowl, add eggs and whisk. Add in peanut butter, honey, and vanilla and stir to combine. Add in purple sweetpotatoes and mix until combined.
Combine the dry ingredients into the large bowl of wet ingredients and mix until just blended, adding the milk halfway to loosen the consistency.
Fold in the chocolate chips.
Spread the mixture into a parchment paper-lined 8x8 in pan.
Bake at 350 for 35 minutes. Remove and add optional Valentine’s M&M’s
Bake for another 10 minutes or until a toothpick is inserted and comes out mostly clean.
Allow to cool, then slice, and enjoy with your lover!
