Varieties
Covington
Our favorite variety, Covingtons are perfect for mashing or roasting. This variety accounts for more than 80% of our acres and has rose-colored skin with very sweet orange flesh.
Murasaki
This variety originated in Japan and has purple, reddish skin with starchy white flesh. You can roast these up with your other favorite vegetables for a colorful side dish.
Purple Splendor
As the name suggests, this variety has dark purple skin and purple flesh. It produces uniform, blocky to round sweetpotatoes.
