Hot Honey Watermelon Salad
This salad is a creative way to enjoy watermelon and make it a little more filling with protein and healthy fats from pistachios and feta. Plus the hot honey gives it a tasty bit of sweet heat. Bring it to a cookout as a refreshing side, have it as a healthy snack, or serve it as an appetizer.
Ingredients:
1/2 of a Bethany’s Best watermelon, cut into bite-sized pieces
2 cucumbers, thinly sliced and halved
8 ounces of feta cut into cubes
1/2 cup of pistachio pieces
1/2 cup fresh basil
2 tbsp olive oil
1 lime juiced
1/2 tsp flaky salt
3 tbsp hot honey
To make hot honey:
Combine 1/2 cup of honey and 1 tbsp of red pepper flakes in a small pot over medium heat. Once the honey begins to bubble, remove it from heat, add 1 tbsp hot sauce, and let sit for 5 minutes. Strain the honey into a glass container, removing red pepper flakes.
Instructions:
Add watermelon, cucumbers, pistachios, and feta to a bowl.
Top with olive oil, lime juice, salt, hot honey, and basil.
Toss with two large spoons and enjoy!
