Spooky Purple Sweetpotato Pancakes
These festive pancakes are a sweet way to celebrate a spooky Halloween! Since the cookie cutters make this recipe, it can be easily modified to celebrate any holiday. You can also substitute orange-flesh sweetpotatoes for purple sweetpotatoes. Since orange-flesh sweetpotatoes are moister, you may need to use slightly less milk.
Ingredients:
1 cup Farm Pak purple sweetpotatoes, mashed
3/4 cup all-purpose flour
1 tsp baking powder
1/2 cup milk
2 eggs
2 Tbsp salted butter
Pinch of salt
Pure maple syrup for serving
Directions:
Whisk together the mashed purple sweetpotatoes, flour, milk, eggs, baking powder, and salt.
Add in the melted butter and combine.
Heat a skillet over low to medium heat and oil cookie cutters of choice.
Pour batter into the cookie cutters, ensuring that the batter is spread evenly through every nook and cranny of the cookie cutter.
Cook for about 3-5 minutes or until batter begins to bubble.
Flip the pancakes while still in the cookie cutter mold.
Cook for another 2-3 minutes.
Remove from heat., allow to cool for 1-2 minutes before removing the cookie cutter.
Decorate with eyeball candies, icing, or whatever you desire to make these pancakes even spookier!
Serve with warm maple syrup and enjoy if you dare!
